Brian is a fractional strategy practice serving ingredient, food tech, and CPG innovation companies. From a foundation in life sciences, he has spent 25+ years building across the food industry as an entrepreneur — spanning ingredients, product development, sensory research, consumer insights, CPG innovation, and M&A advisory, including an important role in creating FlavorSum in partnership with Riverside Company.

Today he advises owners and senior leadership of food tech, CPG innovation, and ingredient companies on strategy and design for culture, organizational structure, and communication — and guides leadership teams through M&A strategy and integration.

Commercial Director, Creme Global


Brendan is the Commercial Director at Creme Global, a data science, AI, and predictive modelling company. He has worked with a wide range of companies in the food, cosmetics and ICT space over the last two decades. Experienced in engaging with C-level management and technical teams to scope complex requirements and deliver solutions to meet client needs. He has completed an engineering degree in Ireland and an Executive MBA at the University of Cambridge, UK.

Zolvia is a food technology platform solving critical formulation problems for brands and manufacturers. Our platform significantly enhances the bioavailability, solubility and stability of functional ingredients in food & beverage applications. This technology transforms ingredients once considered too unstable, insoluble, or poorly absorbed, turning them into commercially viable end-products, bringing a new generation of functional foods to the market.

Nicholas is the founder and CEO of Zolvia. His background stems from pharma & biotech before he re-entered academia to pursue a PhD in bioengineering and stem cell applications. During his PhD he founded his first venture: a nutrition brand focused on anti-inflammatory and anti-oxidant supplements and cosmetic products. It was during this period Nicholas first-hand experienced many of the formulation barriers associated with expensive ingredients, ultimately building the foundations of what Zolvia is today. After discovering the potential of developing delivery systems to overcome these formulation barriers, Zolvia was born.

CO-Founder & CEO, Daisy



Daisy is optimising resources for the natural world. Starting with dairy and food processors, Daisy's AI platform powers supply and demand forecasting to cut error, reduce waste, and protect margin. Daisy works with leading processors across Europe and North America - its flagship deployment with Kinisla delivered a 60% reduction in forecast error. Daisy operates from Ireland and the United States.

Andrew Moore is the co-founder and CEO of Daisy. Raised on a fourth-generation dairy farm in County Meath, Ireland, he understands where food comes from - and the margin pressures processors face every day. Andrew leads Daisy's vision as the intelligence layer for manufacturers, working closely with planning, supply chain, and commercial teams across Europe and North America.


BRIDGET HANNON ESTEVES, PhD, RDN, LDN

Bioactives



Bridget is a principal scientist at Mars Snacking. As part of the global scientific and regulatory affairs team, her role blends emerging science and regulatory strategy to achieve breakthrough innovation across the portfolio, specifically in the 3-5+ year horizon. She holds a PhD in nutritional sciences and is a registered dietitian, enabling her to translate complex science into compelling consumer messaging. Bridget’s experience in the food & beverage industry spans dietary supplements, CPG, and medical foods.
